The Lab is the experimental kitchen behind Silk and Silk Izakaya. This is where new dishes are tested — live, in front of you — before they earn a place on our menus in Croatia and abroad. Same pan-Asian signature, fewer rules.
Tamari tofu and pickled daikon kimchi. Padrón peppers in chilli butter off the binchotan. Pork and prawn wontons in peanut sauce. Sea bass crudo. Marinated watermelon with vegan caviar. Scallops on kimchi butter, clams in Tom Kha broth, miso chicken and char siu skewers over coals. Nasi goreng under a fried egg. Coconut sticky rice with mango and grilled stone fruit.
Everything is made to be shared.
Location is available for private functions from April 1st to June 30th and from September 1st to October 31st.
